Nấm bào ngư ngâm nước pha muối rồi cắt bớt góc rửa sạch vắt ráo. Pha nước ướp gồm 1 muỗng canh nước tương, 1 muỗng canh tương ớt, 1 muỗng cà phê đường, 1/2 muỗng cà phê hạt nêm chay knorr nấm hương, 1/4 muỗng cà phê tiêu, 2 muỗng cà phê dầu mè tất cả trộn đều rồi đổ vào nấm, đảo đều cho nấm thấm gia vị.
Hai cây sả rửa sạch cắt lát, trải 2 miếng giấy bạc chồng lên nhau cho 1/2 sả lên rồi cho nấm bào ngư lên và cho phần sả còn lại lên rồi gói kín giấy bạc, cho vào nồi hấp cách thủy khoảng 7 phút.
Dùng mũi kéo bấm giấy bạc rồi cắt giấy bạc như hình, bày nấm lên mâm dọn kèm nước tương ớt cay và ít rau sống.
